Keep fish very cold (32-36°F
is ideal) and use or freeze it within
two days of purchase.
Thaw frozen fish in the refrigerator, never at
room temperature, to avoid the rapid multiplication of bacteria,
which allows bacteria to multiply very rapidly.
Keep cooked or cooking fish away from surfaces or
utensils that touched raw seafood and wash hands after handling
raw fish.
Cook fish 8-10 minutes per inch of thickness,
just until it is opaque and flakes easily under light pressure
from a fork.
Discard open mollusks (clams, mussels, etc.)
that do not close up after being tapped or run under cold
water.
