Food Safety
- Keep fish very cold (32-36°F is ideal) and use or freeze it within two days of purchase.
- Thaw frozen fish in the refrigerator, never at room temperature, to avoid the rapid multiplication of bacteria, which allows bacteria to multiply very rapidly.
- Keep cooked or cooking fish away from surfaces or utensils that touched raw seafood and wash hands after handling raw fish.
- Cook fish 8-10 minutes per inch of thickness, just until it is opaque and flakes easily under light pressure from a fork.
- Discard open mollusks (clams, mussels, etc.) that do not close up after being tapped or run under cold water.
