Sautéed Snow Crab Salad
Fresh shelled snow crab is the star of this dish! This warm sautéed salad is great for cool fall days and perfect for lunch or dinner! For a more filling and hearty option, serve over rice.

- 1 pound shelled snow crab meat (about 3-4 pounds snow crab clusters)
- 3 tablespoons extra-virgin olive oil
- 1 teaspoon minced garlic
- 1 teaspoon grated ginger
- 2 tablespoons soy sauce
- 1 lime (juice)
- 1/2 teaspoon granulated sugar
- 1/2 teaspoon black pepper
- 1/4 cup roughly chopped cilantro
- butter lettuce
- red bell pepper
In a sauté pan, heat olive oil. Add garlic and ginger and stir for 30 seconds. Add soy sauce, lime juice, sugar and pepper.
Add crab and sauté until warmed through, about 1 minute. Top with cilantro. If desired serve with butter lettuce, radicchio, avocado slices, red bell pepper and carrot slices.
