Our Mexican Breakfast Bake builds on years of creating and perfecting traditional Mexican recipes. Each bowl is packed with organic roasted potatoes, corn, refried black beans, or house-made tofu scramble, Anaheim chiles and spices. Then it's topped with our very own chile relleno sauce made from scratch and a blend of Monterey Jack and Cheddar cheeses. It's a great excuse to enjoy Mexican food for breakfast. (Not that you never need an excuse to enjoy Mexican food.) After the birth of our daughter Amy in 1987, we found there was little time to prepare the quality homemade food we normally ate. Realizing there were others like ourselves, we set up Amy's Kitchen to prepare delicious meals for those who care about the food they eat but are often too busy to cook. We use only the finest ingredients and prepare them with the same careful attention in our kitchen as you would in your own home. Directions Perishable. Keep frozen. Microwave or regular oven. Ovens may vary. Microwave Oven: Make a 1-inch slit in overwrap. Cook on high for 3 minutes. Remove overwrap. Stir. Cook on high for 1 more minute. Let sit 1 minute. Serve. Conventional Oven: Preheat oven to 400 degrees F. Remove overwrap. Cover tray with foil and place on a baking sheet. Bake for 45-50 minutes. Let sit 1 minute. Serve. Toaster Oven: Remove overwrap and tray. Place in an oven-safe dish. Follow conventional oven directions.
