Black Bean Breakfast Bowls

This healthy, protein packed breakfast combines layers of black beans, scrambled eggs, avocado, and salsa for a delicious breakfast bowl. - 1 cup black beans
- 4 eggs (beaten)
- 2/3 cup cherry tomatoes
- 2 tablespoons crumbled feta
- 1/2 of a fresh, soft avocado
Heat a skillet to medium and spray with non-stick cooking spray. Cook black beans in skillet until hot. Divide between 2 bowls and wipe out skillet.
Return to heat and scramble eggs. Spoon scrambled eggs over black beans.
Spray pan with non-stick spray, and add cherry tomatoes. Stir occasionally, so the tomatoes char and burst (about 5 minutes).
Pour tomatoes on eggs, add crumbled feta and freshly scooped avocado. Sprinkle with sea salt, if desired.
